About the Chef: Haim Cohen
Award winning chef Haim Cohen (1960, Tel Aviv), is one of Israel’s top chefs and TV personalities. Cohen has been the leading judge on Israeli MasterChef for the past eight years and is one of the most respected chefs on Tel Aviv’s culinary scene. He opened his first restaurant, Keren, in 1985 serving nouvelle cuisine. Cohen currently has two leading restaurants in Tel Aviv: Dixie Grill Bar, a steakhouse opened in 1994, and Yaffo-Tel Aviv, opened in 2011, where his experience and personal taste come together. The chef is also culinary advisor to a number of high-end restaurants worldwide, including The Duchess in Amsterdam (awarded a Michelin star in 2017).
The chef’s early childhood was very connected to the fascinating Carmel Market in Tel Aviv, where his grandfather sold colourful, fresh fruit. The vibrant atmosphere of the market and the pride his grandfather felt for his produce, made Cohen aware of the gifts of nature at a very young age. This sparked his passion and, today, he is producing vegetarian dishes with consciousness, creativity and a great emphasis on seasonal, local legumes. Cohen believes a plant-based diet helps maintain a balance on the planet and at Ve Café he translates this into unique recipes.
